Hittu (Ugadi special)

Hittu is our popular traitional delicacy..they are Ugadi special..

hittu is prepared with the same idly batter with ginger chopped and cumin seeds as addition..
use jackfruit leaves and thin sticks to make leaf cones as moulds..

fill the leaf cones about 3/4 full with the batter.


then place into the steamer and steam for 30mnts..


hittus get the flavour of jackfruit leaf and it remains softer than idlis and fresh for 2 days..so these hittus are convenient for carrying on long distance travels.

chutney and sambar is good combination for hittu..apart from this,we make fried bittergourd pickles as a good accompaniment to hittu..


the recipe for Fried Bittergourd Pickles 

ingredients
Bittergourd-1
kashmiri chillies-15
asafoetida-1/2 tsp
tamarind-a goli size
mustard
cumin seeds
curryleaves
salt
oil
Procedure
1.wash bittergourd and cut into thin strips..
2.mix with salt and keep aside for 15mnts..then squeeze off them..
3.meanwhile roast the red chillies in 2 tabsp oil just for seconds..
4.deep fry the bittergourd strips till it becomes golden brown..


5.put the roasted redchllies,tamarind,asafoetida and salt  in a blender and blend with a little water till it becomes a paste..


6.transfer this paste to a vessel and add required amount of water and bring to boil on a medium flame..
7.add fried bittergourds to it and season with mustard,cuminseeds and curry leaves..


Now hittu with pickles is ready to serve..
